Try one of the following recipes as an after-school snack or on a weekend:
1. Pigs in a Blanket
- 1 pkg. (8) Croissant rolls
- 4 European Smoked Wieners
Open the package of croissants and separate them. Cut the wieners in half (cutting across the wiener). Wrap each section of wiener with a croissant, closing up the ends. Bake in the oven at 350º for approx. 12 – 15 minutes, until the crust is browned.
2. Frozen Fruit Skewers with Honey-Yogurt Dipping Sauce
- 6 Bamboo skewers
- I cup fresh fruit pieces (grapes, berries, pineapple chunks)
- ¼ cup plain yogurt
- 2 teaspoons honey
Place the fruit on the skewers. Freeze the skewers in an airtight container or zip-lock freezer bag for at least 5 hours (until frozen solid). Just before serving, mix together yogurt and honey and serve with frozen skewers.
3. 2 Ingredient Pancakes
- 3 small ripe bananas
- 3 eggs, lightly beaten
Optional: berries, yogurt, maple syrup
Mash the bananas well. Whisk in the eggs until well mixed. (The ratio should be approximately 1/3 cup of banana per egg). Heat a non-stick frying pan over a low-medium heat. Pour in 1/3 of a cup of the batter. Cook until bubbles form all over the surface and flip. Cook a further 1-2 minutes and serve.
If you wish, use berries to decorate the pancakes and add maple syrup or yogurt for added taste.
4. 2 Ingredient Macaroons
- 500g (approx. 2¼ cups) flaked coconut
- 1 can sweetened condensed milk
Preheat oven to 350º. Line a cookie sheet with wax paper and set aside. In a bowl, combine the coconut and sweetened condensed milk. Drop tablespoon-sized balls of the mixture onto the cookie sheet. Bake for 10 –12 minutes or until golden brown.
